Chef Ayman brought recipes passed down through generations of his family. The flavors of Jordan and Palestine found a new home on Hillsborough Street, right outside Shahrazad Coffee. With 35 years in the food industry, his craft shows up in every plate.
The truck has been rolling for 8 years now, and it quickly became a late-night institution. Word spread through the NC State campus and beyond: the shawarma is the real deal, and the kunafa is unlike anything else in the state.
This isn't a franchise or a chain. Chef Ayman runs the grill. His daughters help in the kitchen. Every customer gets treated like a guest in their home. That personal touch shows in every bite and every interaction.
